1 package instant mashed potatoes
Prepared Cin Chili, chilled
1/2 can corn
Preheat oven to 400˚F. Prepare the instant mashed potatoes as per the directions on the box. Line the bottom and sides of a round casserole dish with the mashed potatoes. Leave a cavity in the center for the chili. Place the casserole dish in the oven and bake for 30 minutes until the potatoes are a golden brown. Remove from the oven and fill the cavity with Cin Chili. The Cin Chili should be chilled. Place more mashed potatoes over the top of the chili in the center of the dish but not all the way to the edge. You’ll have an outside ring of potato, a ring of chili, then a circle of potato in the center. Place back in the oven for another 20 minutes or until the chili is bubbling and the potato is golden brown. If desired, add 1/2 can of corn, chopped onion or cheese to the chili.
For a quick and easy version, substitute the Cin Chili with 3 packages of Ready-To-Serve Hearty Beef Cin Chili.
